Potato Salad
Serves: 6-8
Ingredients
2 lbs. potatoes, about 6 medium
1/4 cup onion, minced
1 tsp. salt
1/8 tsp. pepper
1/4 cup Italian salad dressing , or pickle juice
1/2 cup mayonnaise
1/2 cup celery, chopped
Directions
Wash and peel potatoes. Cut in half. Drop in boiling, salted water and cook for 20 minutes. Drain and cool. Meanwhile, cut onion and celery. When potatoes are cool, cut into cubes, combine in bowl with onion. Sprinkle with salt and pepper. Mix with Italian dressing. Cover, refrigerate at least 2 hours. Just before serving, add mayonnaise, toss until potatoes are well-coated. Stir in celery. Enjoy!
