Make-Ahead Caesar Salad
Ingredients
1 head romaine lettuce
1 tsp. dry mustard
1 clove garlic
1/4 tsp. freshly ground black pepper
1/2 tsp. salt
2 tbsp. fresh lemon juice (or 1 lemon)
1/2 cup vegetable oil
2 tbsp. Parmesan cheese, plus extra for topping

Directions
Wash, dry and tear lettuce
Mash mustard into garlic. Mix in pepper, salt, lemon juice, oil and cheese. Place dressing mixture in bottom of a salad bowl.
Place lettuce on top of dressing, cover tightly and refrigerate up to 24 hours.
When ready to serve, toss lettuce with dressing. Sprinkle with extra cheese to taste, garnish with croutons.
