Roasted Asparagus with Parmesan

Serves: 4


Ingredients

1 lb. fresh asparagus
olive oil
salt and freshly ground black pepper
fresh grated Parmesan cheese
2 lemons, cut in wedges for serving

Directions

  1. Heat oven to 400 degrees. Snap or cut the dry stem ends off of each stalk. Place the asparagus on a baking sheet, drizzle with olive oil, then toss to coat completely.

  2. Spread the asparagus in a single layer and sprinkle liberally with kosher salt and freshly ground pepper. Roast for 10-15 minutes until tender.

  3. Sprinkle with Parmesan cheese and return to the oven for a minute. Cool slightly and serve with lemon wedges.
