Make-Ahead Mashed Potato Casserole
Serves: 10
Ingredients
5 lbs. baking potatoes, 8-10, peeled and boiled until tender
1 8 oz. package cream cheese, softened
1 cup sour cream
4 tbsp. butter
1 tsp. salt and freshly ground pepper
Directions
1. Beat the sour cream and cream cheese together. Add the hot, drained potatoes. Beat until smooth. Add the butter, optional chives, salt and pepper. May add 1/2 cup heated milk to make mixture smoother.
2. Transfer to a buttered 9x13” baking dish. Cool completely. Cover tightly with plastic wrap and refrigerate 2-3 days.
3. Remove plastic wrap. Bake at 350 degrees for 25-30 minutes, until heated through.
